Rich professional life full of memories in this wonderful profession of excellence, perpetual innovation is the Hotel and Restaurant. I had the chance to know for almost forty three years this wonderful profession and work in larger hotels, luxury hotels and starred restaurants.

I have known exceptional chefs, great directors, real “bosses” in the world of international tourism. Names that make dream, among others: Negresco, Ruhl, the Reserve de Beaulieu, Lassere, Dean, Grand Hotel de l’Opera, Palm Beach, Little Tower, Casino of Enghien, Hotel Royal, Gray d’Albion, Hotel de Paris “Louis XV – Alain Ducasse; the MUST Man, a chief, a friend.
This is a great and rewarding career that I now dedicated to the Slow Food movement, its ethics and philosophy, as a companion or a pilgrim, I always walks with as much ardor to implement the ‘Good, Clean and Fair ” and change this world disturbed and sick.

Thank you for showing interest in our defense policy of quality and food safety, our philosophy and our ethical priciples “Good, Clear and Fair” developed through the world of food communities, putting in first place and trying to preserve biodiversity while respecting the environment and our land. We welcome you.

Our association, derived from the Slow Food International, based in Bra (Piedmont), stems from the desire and the initiative of men and women rightly concerned about the state fo the environment and the climate are increasingly, degraded and about “deficit” cognitive around our culinary heritage and products of our land and in our seas.

The same philosophy which heads the Movement for the struggle against the “iunk food” to be vigilant, and change our mentality and fight against the vice of habit!

The Convivium, born in 1999 and still in full and continuous evolution has led us to think in a mature way in the prespective of a ” second evolution”, a real revolution in our path, along which we were accompanied by englitened opinions of Alain Ducasse, out honorary president, until he lands in the Principality of Monaco and make this a new and more ambitious head office, to even come close to the prestigious Foundation of Price Albert II.

We support his policies in degence of marine biodiversity, protection of endangered species, especially bluefin tuna in order to avoid finding ourselves in a few years, only to consume farmed fish. We are equally committed to supporting “Earth Mother”, worldwide network of food communities who are fighting to defend the products that are gradually disappearing, recognized inside the “Ark of Taste – land and nutrition, sustainability, biodiversity, equity” and we take care of those who work beside us, in our country, of our markets Bio, our vineyards, our craftsmen. The association claims to be independent in any respect, both political and religious, and financial.

We would be pleased and honored to carry with uou our ideas, with respect to your way of hinking, to welcome as members in our modest “innovative research” and fight together for a sustainable and equitable development, in monitoring the spread of a healthy food culture.

Slow Food is a major international non-profit association committed to give the right value to food, in respect of those who produce, in harmony with the environment and ecosystems, thanks to the knowledge of which they are custodians territories and traditions. Slow Food is working every day in 150 countries to promote good nutrition, clean and fair for all.


A growing worldwide network that gives voice to those who want to build from the bottom a different model of food production that respects the balance of nature, the dignity of producers, consumers’ health. They are part of the Earth Mother peasants, farmers, fishermen, cooks, academics, students, consumers, who share the same desire: to safeguard the territory and guarantee everyone a good, clean and fair. Terra Madre is the meeting between representatives of the global network (in Turin every two years) and regional networks (in Tours, Bilbao, Brasilia, Buenos Aires, Dar es Salam, etc.). Terra Madre is a set of local projects on five continents that protect biodiversity and promote short supply chains and taste education.



The Salone Internazionale del Gusto, organized by Slow Food, the Piedmont Region and the City of Turin in its seventh edition, is a food market, a meeting place and gathering where he engaged in the economy and the exchange of food and wine culture. The goal is to provide consumers and visitors of signs to know and learn to choose food. The Hall becomes a real place for debate on the major issues: the supply chain to consumers, from advertising to education, everything, in short, what concerns gastronomy and economy associated with it.




L’association Slow Food Monaco Riviera Côte d'Azur se compose de restaurateurs, hôteliers, ou même de simples personnes qui aiment la bonne cuisine, l’alimentation propre et la qualité de la vie. On peut devenir membres dans plusieurs manières, au but de soutenir et participer à l’association d’une façon active et importante. L’association a établi des différentes typologies d’inscription.
