Rich professional life full of memories in this wonderful profession of excellence, perpetual innovation is the Hotel and Restaurant. I had the chance to know for almost forty three years this wonderful profession and work in larger hotels, luxury hotels and starred restaurants.
I have known exceptional chefs, great directors, real “bosses” in the world of international tourism. Names that make dream, among others: Negresco, Ruhl, the Reserve de Beaulieu, Lassere, Dean, Grand Hotel de l’Opera, Palm Beach, Little Tower, Casino of Enghien, Hotel Royal, Gray d’Albion, Hotel de Paris “Louis XV – Alain Ducasse; the MUST Man, a chief, a friend.
This is a great and rewarding career that I now dedicated to the Slow Food movement, its ethics and philosophy, as a companion or a pilgrim, I always walks with as much ardor to implement the ‘Good, Clean and Fair ” and change this world disturbed and sick.

Our association, derived from the Slow Food International, based in Bra (Piedmont), stems from the desire and the initiative of men and women rightly concerned about the state fo the environment and the climate are increasingly, degraded and about “deficit” cognitive around our culinary heritage and products of our land and in our seas.
The same philosophy which heads the Movement for the struggle against the “iunk food” to be vigilant, and change our mentality and fight against the vice of habit!
The Convivium, born in 1999 and still in full and continuous evolution has led us to think in a mature way in the prespective of a ” second evolution”, a real revolution in our path, along which we were accompanied by englitened opinions of Alain Ducasse, out honorary president, until he lands in the Principality of Monaco and make this a new and more ambitious head office, to even come close to the prestigious Foundation of Price Albert II.
We support his policies in degence of marine biodiversity, protection of endangered species, especially bluefin tuna in order to avoid finding ourselves in a few years, only to consume farmed fish. We are equally committed to supporting “Earth Mother”, worldwide network of food communities who are fighting to defend the products that are gradually disappearing, recognized inside the “Ark of Taste – land and nutrition, sustainability, biodiversity, equity” and we take care of those who work beside us, in our country, of our markets Bio, our vineyards, our craftsmen. The association claims to be independent in any respect, both political and religious, and financial.
We would be pleased and honored to carry with uou our ideas, with respect to your way of hinking, to welcome as members in our modest “innovative research” and fight together for a sustainable and equitable development, in monitoring the spread of a healthy food culture.
